Chocolate Chip Oatmeal Peanut Butter Cookies
1/2 cup shortening
1/2 cup margarine, softened
1 cup packed brown sugar
3/4 cup white sugar
1 cup peanut butter
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup quick-cooking oats
1/2 bag of chocolate chips *optional*
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large bowl, cream together shortening, margarine, sugars, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt in a separate bowl; slowly add flour mixture to cream mixture. Mix in oats and chocolate chips until just combined. Drop rounded teaspoonfuls onto ungreased cookie sheets.
3.Bake for 9-10 minutes or until just light brown.
I love these cookies.
Maybe a little too much, I've already bagged half of them and need to give them away fast!
*Just a note, the original recipe said it yields 4 dozen cookies, but I always end up with more like 5-6 dozen cookies...with or without the chocolate chips.
