"I Can Take an Armful and Make a Treat!"

If you were a fly on the wall in my kitchen tonight, you might have caught me singing Popcorn Popping on the Apricot Tree* and scraping caramel gooey goodness off the bowl like a little kid after making popcorn balls.

Mmm. Mmm.

These were delish!

I got the basic recipe from Oops I Craft My Pants but made a few small adjustments.

Want to make some? I promise they won't disappoint!

You need:

1- 10.5 oz bag of mini marshmallows
1 c brown sugar
1/2 of butter or margarine
2- 3 oz bags of microwave popcorn
cooking spray or veggie oil

Pop both bags of popcorn in the microwave, remove all unpopped kernals. Melt butter and brown sugar in a large pot on stove top. Add marshmallows and stir often until melted. (These steps can be done in the microwave) Add popcorn and stir until popcorn is completely covered in delicious gooeyness (not a real word). Let cool for a few minutes.

Now for the balling part. Learn from my mistake and don't burn your hands. Take a large wooden spoonful of popcorn and let it cool (blowing on it will help, but might not be the most sanitary thing if you're a germaphob). Then with greased hands, form it into a ball and eat...or place on cookie sheet.

This recipe made about twenty 2.5" popcorn balls.

Seriously, these were soooo good!

Thanks Erika for the idea.

Enjoy!
*Popcorn Popping on the Apricot Tree Lyrics:

“I looked out the window and what did I see?
Popcorn popping on the apricot tree.
Spring has brought me such a nice surprise.
Blossoms popping right before my eyes.
I can take an armful and make a treat.
A popcorn ball that would smell so sweet.
It wasn’t really so, but it seemed to be, popcorn popping on the apricot tree.”

You can see some cutie kids singing it on youtube here.
