Simple Taco Soup

Taco Soup is an oldie but a favorite of mine! It's so easy to make (and cheap!). We almost always have all the ingredients on hand to make it. Haven't tried it before? Put it on next week's menu. It's perfect for the colder weather.



This recipe is so versatile, you can toss just about anything in it, but here's how we make ours...

Simple Taco Soup
1 lb ground turkey (or beef)*
1 small-medium onion chopped
1 can dark kidney beans
1 can black beans
1 can corn (drained)
1 can fire roasted tomatoes
1 packet of taco seasoning
1 1/2 c water

Brown turkey and onions in skillet, drain, and add to crock pot. Drain and rinse beans. Add beans and remaining ingredients to crock pot, mix well and cook on low for 6-8 hours.

Top with cheese and sour cream...good enough to eat plain, even better with fritos, cornbread, or tortilla chips.

So easy...so good! I can't put this in the crock pot without my husband sampling it all day if he's home. My husband likes it with that amount of seasoning, but I know sprinkle a tad bit more taco seasoning in my bowl.

Other good mix-ins are olives and green chiles.
*If you haven't cooked with ground turkey, it's worth a try! We don't taste much difference in most recipes (like this one) and I don't know about other areas, but lately lean ground turkey has been cheaper than lean ground beef around here.
