Mexican Lasagna

March already?!

Here's an easy recipe.
Mexican Lasagna.

Let me tell you, don't judge a dish by it's recipe...or looks.

When my husband saw what I was putting in it, he gave me this weird look. I responded with a smile and "I hope your hungry!"  He said "uh...yeah...me too."

When my 3 year old saw me put it on the table, she said "Oh, it's beautiful mommy!"

Really?...looks wise..that's a negative.

A little better dished up...


Looks aren't everything, this was one easy, tasty dinner.

Mexican Lasagna:

1 lb ground beef or turkey
3 or 4 tortillas
1 can cream mushroom soup
1 can corn
1/4 cup diced onion
1 15 oz can refried beans
2-3 cups of shredded mexican blend cheese
1/4 cup sour cream
Taco Seasoning
Toppings *optional

Preheat oven to 350.

Brown and drain ground beef or turkey and onion in large skillet. Add corn, beans, soup and mix well. In a small bowl, mix sour cream and taco seasoning. I added maybe 2-3 tablespoons. Add sour cream mixture to meat mixture and heat thoroughly.

Here comes the lasagna part, add a small amount of meat mixture to the bottom of a 13x9 baking dish. cut tortillas in quarters and fit to fill pan. Add more meat mixture, sprinkle with cheese, add another layer of tortillas, top with the remaining meat mixture and cheese.

Bake 30 minutes.

Top with lettuce, salsa, sour cream, black olives or whatever you please!



Hubby was super nervous when he saw that can of cream of mushroom (and I have to admit I was a bit too!), but we both really liked it. My 3 year old can be super picky when it comes to casseroles/lasagna... she likes to see each thing she is eating, but she loved this and even asked for leftovers the next day for lunch.
And now for confession time...some nights our dining room table looks like this:


It's something I'm working on...keeping the dining room table for just dining at as my husband would say. It might help if I got the craft room under control.
